All salt is not created equally. Pangasinan Rock-Sea Salts is hand harvested in the Pangasinan province in the Republic of the Philippines. Located in the west central area of the island of Luzon, it’s the traditional salt making region of the Philippines. Pangasinan means “land of salt” or “place where salt is made”, and its mineral rich, white sand beaches have produced a flavorful and medium textured sea salt for centuries.

Pangasinan Rock-Sea Salts is only harvested from December through April when the weather is driest and the sun is the hottest. This tends to limit the availability of the sea salt. Salt water from the South China Sea is allowed to flood into brick lined field beds that lie adjacent to the coast. The baked clay lining layering the fields prevents any contact of the sea water with the soil. The beds are as shallow as possible to facilitate drying.
In the drying process, water is drawn out through natural solar evaporation.The salt crystals or chunks that are produced once the sea water is evaporated are hand raked and harvested. The collected salt chunks are then purified by boiling in water in an adjacent area, creating a pure sea salt with its mineral content intact. The wet salt is then suspended in straining baskets above the ponds, allowing the excess salt water to drip back down to the salt bed.
